Pelatihan Pembuatan Abon Telur Untuk Mendukung Ketahanan Pangan Keluarga di Desa Tanahkaraeng Kabupaten Gowa

Abstract
This Community Service Program (PKM) aimed to enhance the skills and knowledge of residents in Tanahkaraeng Village, Gowa Regency, in processing eggs into shredded egg (abon telur) as an effort to support household food security and create home-based business opportunities. Eggs are highly nutritious but perishable, thus requiring innovative processing to extend shelf life and increase market value. The program implementation included lectures on food security and egg nutritional value, demonstrations of shredded egg production, and hands-on practice by participants. The training was attended by 15 housewives using a participatory approach. The results showed that all participants were able to independently perform the shredded egg production process, most produced products of good quality, and expressed interest in developing shredded egg as a local business. This program is expected to continue with product diversification, packaging training, and marketing strategy development to enhance the competitiveness of local products.
